Bev Shaffer is a chef, cooking school instructor and author.  She is the Director of Mustard Seed Market's Cooking Schools in Akron and Solon, Ohio.  Bev has developed more than 9,000 recipes on a wide variety of subjects, including seafood, desserts and grains. Bev has taught classes in collaboration with the Cleveland Clinic, the Cleveland Botanical Garden, and Akron General Wellness Center.

Don’t just put dressing on your veggies – put veggies in your dressing with this sweet and tart and spicy dressing. (Oh my!)

Tomato Vinaigrette:


Ingredients:
1 cup extra virgin olive oil
4 ripe plum tomatoes, cored and quartered
2 cloves garlic, finely minced or pressed
1 teaspoon chopped fresh thyme leaves
1 ½ teaspoons chipotle in adobo sauce, pureed
1/3 cup balsamic vinegar

Instructions:
Heat oil in a skillet over medium heat. Add tomatoes and cook, stirring, until softened. Add the garlic, thyme, chipotle and vinegar and cook, stirring for 3 additional minutes.

Cool; transfer to a blender and process until smooth. Use immediately or cover and refrigerate until ready to use. Whisk to combine well before using.
Makes about 1 ½ cups.
